“FLUFFY EGGLESS PANCAKES” IS IN:

FLUFFY EGGLESS PANCAKES 
1 cup all-purpose flour
1 tsp. sugar
1 tsp. cinnamon
2 tsp. baking powder
1 cup whole milk
1 tbsp. vegetable oil
1 tbsp. water
1 tsp. vanilla extract
2 tbsp. butter

Combine dry ingredients and mix slightly. Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.

Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.

Return pan to stove and stir butter into batter.

When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.

Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.

Note: This recipe also works well with whole-wheat flour.

Variation: Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat!

I actually used the pancake mix and didn't have to add the other dry ingredients. I did add cinnamon, nutmeg and a banana. Just wanted to say "thank you" for letting me know pancakes don't have to have eggs added. My brand new recipe and they were so much FLUFFIER!!! :)

These pancakes are easy, but do need a little salt added to the batter. I had to sprinkle a little on them after taking a bite with syrup. After that, they tasted fine.

I made the recipe as stated. I'd say if you absolutely cannot eat eggs due to dietary restrictions then these are passable. Otherwise they are quite heavy and flat, even with 2 tsp. of baking powder! Also, a whole tsp. of cinnamon might be a bit overpowering given only a cup of flour. Won't make again.

Not good at all I made these they were very bland. All flavor from vanilla and cinnamon was not in the pancakes. Very disappointed
