GRILLED AHI STEAKS (YELLOW FIN
TUNA)
 
2 (8 oz. ea.) yellow fin tuna steaks

Marinade:

1 cup soy sauce
1/2 cup lemon juice
1 clove crushed garlic (for each steak)
4 tablespoons extra virgin olive oil
small amount of sea salt, to taste
fresh ground black pepper, to taste

In a shallow 9x13-inch glass dish, prepare all of the marinade ingredients. Remember, if you have more than 2 (8 oz.) tuna steaks, you might need to adjust the ingredients to marinate. Marinate both sides (dredge steaks and get marinade on both sides). Let sit in refrigerator for 30 minutes before grilling. Note: Soy sauce will overpower tuna if you marinate for too long!

Light the grill while tuna is marinating. Once coals are white (30 minutes) spread them and clean the grill, then wipe with oil so steaks don't stick.

Grill for 4 minutes or less per side for 1 inch steaks, depending on how you like them. Steaks should be firm with pink in the middle. If you prefer steaks to be more rare, grilling time should be 2 1/2 minutes on each side.

Recommended Side dishes: Serve with white and long grain wild rice (We used Vigo) and grilled yellow squash cut lengthwise, sprinkled with Sea Salt and pepper squash and drizzled with Extra Virgin Olive Oil. Use the same marinade as for the tuna. For grilled squash, brush with marinade frequently during grilling, and grill until just tender.

Got a high quality 1.4 lb Yellowfin Tuna (Ahi) and used this marinade. Grilled it over charcoal and it was very tasty. Between the red color of the fish and the soy based marinade, the fish had a color resembling steak. Simply awesome!

Working on this right now. I am using about 1/4 cup soy sauce (all that was in the house, although I agreed that a cup was too much). Switched lemon to lime juice (and swished it around in a nearly empty orange marmalade jar), used crushed garlic, olive oil, ground black pepper, and coriander. I'm an "improvisational" cook, but recipes like this one point me in the right direction and inspire me. The tuna will be served with corn on the cob and a green salad.

I tried a variation of this recipe. Using the same marinade I added two elements to enhance the marinade with yellowfin tuna flavor. Use Smart Balance to grease your fish grate and on top of each side of the steak while grilling. Turn once per side and sprinkle with sesame seeds on each flip to coat the steak to taste. One word... scrumpdillyicious!

who cares what type of tuna it was, was a great recipe don't do a down swing inch thick steaks was the way to go and it was an amazing dish with wild grain and steamed broc w/ carrots.... thanks

Awesome marinade, I did cut the soy sauce in half though. I cooked it over hardwood mesquite charcoal with some wood chips... Can't get enough, it's sooo good! I also grill my lemons and squeeze over top as I'm eating it...Yummmm!

Used this recipe, but added no extra salt as the soy sauce has plenty. Added a pinch of cayenne, and garlic powder instead of fresh. Grilled it over Kingsford hickory briquets. Holy cow, this was good. Thanks for the inspiration!
