CONCH CHOWDER 
4 lg. conch, chopped or minced
1/2 tbsp. vinegar
1 tbsp. salt
1 tsp. pepper
1/2 tbsp. oregano
2 bay leaves
1 tbsp. bar-b-que sauce
1 lg. bell pepper, chopped
1/8 lb. salt pork
1 med. onion, chopped
2 cloves garlic, crushed
1 lb. can tomatoes
1/2 can tomato paste
2 qts. hot water
1 tsp. poultry seasoning
5 med. potatoes

Dice salt pork and saute in large pot. Add onions, garlic, green pepper. Cook until tender. Add tomatoes, tomato paste, hot water, poultry seasoning. Simmer. Add conch - bring to boil. Add vinegar, salt, pepper, oregano, bay leaves and bar-b-que sauce. Simmer over low heat for 2 hours. Add potatoes and simmer until they are tender. Serves 8.
