DILL MEAT LOAF 
2 lbs. ground beef
1 c. chopped dill spears
2 eggs, beaten
1/4 c. fine chopped onion
1/4 c. bread crumbs
1/8 tsp. pepper
1/8 tsp. salt
1 1/2 c. Monterey Jack cheese
Sliced pickles

In a large bowl, mix all ingredients thoroughly, except cheese and sliced pickles. Divide mixture in half. In a shallow baking pan, pat 1/2 of the mixture into a 9 x 5 inch dish. Sprinkle 1 cup of the cheese to within 1 inch of the edge. Cover evenly with remaining meat mixture. Smooth top and seal edges. Bake at 350 degrees for 1 hour and 15 minutes.

Put on remaining cheese, bake 5 minutes more. Garnish with sliced pickles. Serves 8.
