EGGPLANT PARMESAN 
1 lg. eggplant (thinly sliced; do not peel)
1 lb. ground turkey
1 (28 oz.) jar Ragu Today's Recipe Spaghetti Sauce
Sprinkle-type Parmesan cheese
2 c. part skim Mozzarella cheese (shredded)
Parsley flakes

Steam sliced eggplant until flimsy. In the meantime, brown ground turkey in skillet. Make sure turkey isn't in large clumps. It should be crumbly. Combine browned turkey with spaghetti sauce.

Cover the bottom of a small rectangular baking dish with spaghetti sauce mixture. Now alternate layers of steamed eggplant, spaghetti sauce, sprinkles of Parmesan cheese, parsley flakes and shredded Mozzarella. Finish with a layer of cheese.

Bake covered at 325 degrees for approximately 35 minutes. Serve with salad and garlic bread. This recipe is very low in fat, salt and calories.
