CINNAMON CARROT CAKE 
2 c. sifted cake flour
2 tsp. baking soda
1 tsp. salt
2 c. sugar
2 tsp. cinnamon
1 1/4 c. cooking oil
3 c. grated raw carrots
4 eggs

Sift flour, soda, salt, sugar and cinnamon. Add oil and stir. Add eggs, all at one time. Stir well, add carrots, mix well. Bake in 2 layer pans at 350 degrees about 35 minutes.

ICING:

1 (8 oz.) pkg. cream cheese
1 lb. confectioners' sugar
1 c. chopped pecans
1/2 stick butter
2 tsp. vanilla

Mix well with mixer and spread on cake.
