RAISIN BRAN MUFFINS 
5 c. all-purpose flour
3 c. sugar (2 white/1 brown)
5 tsp. baking soda
1 1/2 tsp. salt
7 1/2 c. (15 oz. bx.) Post Raisin Bran
1 qt. buttermilk
1 c. vegetable oil
4 eggs, beaten

Blend first 4 ingredients in large mixing bowl. Stir in cereal. Mix beaten eggs, oil, and buttermilk. Pour into dry ingredients and blend just until all dry ingredients are moistened. DO NOT stir batter again.

Fill lined muffin pans 2/3 full and bake at 400 degrees for 15 to 20 minutes. If desired brush tops of "muffins" with melted butter and sprinkle with cinnamon sugar before baking.

Makes 4 dozen. Recipe may be halved! Muffins freeze well. Great microwaved and served with butter or cream cheese...

Since microwave ovens vary in power, you may need to adjust your cooking time.
