BRENDA'S BREAKFAST PIE 
1 lb. turkey sausage
1 carton (8 oz.) egg substitute, Healthy Choice or Egg Beaters
1/4 c. chopped scallions
1/4 c. chopped green pepper
1/4 c. chopped red pepper
1/2 c. light cream
1 1/2 c. Colby or Jack cheese, shredded
2 deep dish Ritz pie shells
1/4 tsp. coarse ground black pepper

Preheat oven to 375 degrees.

Cook sausage in skillet. When almost done add peppers and onions. Cook until onions are soft and sausage is cooked through. Remove from heat and drain liquid. Mix in cheese with sausage mixture. Crumble sausage and put in pie shell.

In medium bowl lightly beat egg substitute. Add cream and beat until frothy. Pour in pie shell over sausage mixture. Bake at 375 degrees for 45 minutes (until set). Cool 10 minutes.
