SOFT PRETZELS 
3/4 c. warm water
1 1/2 tsp. dry yeast
Pinch of ginger
2 tsp. sugar
1/2 tsp. salt
2 c. flour
1 beaten egg
Kosher salt

Sprinkle yeast over warm water and stir in ginger, sugar, and salt. Gradually stir in flour. Knead until smooth, about 5 minutes, on floured pastry cloth. Cut off small pieces and roll into ropes, shape into pretzels. Brush with beaten egg and sprinkle lightly with salt. Place in greased baking sheet and bake 15 minutes or until golden. Brown under broiler if desired. Makes 6-8 pretzels.
