VEGETABLE BEEF SOUP 
1 c. leftover beef roast, cubed or chopped
1/2 c. onions, chopped
1/2 c. celery, sliced
1/2 c. carrots, sliced
1/2 c. potatoes, 1/2-inch cubes
1 (16 oz.) can tomato chunks
1 c. frozen mixed vegetables
5 c. water
Salt and pepper to taste

In a soup kettle saute onions, celery, carrots, and potatoes for 15 minutes. Then add tomatoes, frozen mixed vegetables, beef, vegetables, and water. Simmer until vegetables are done, about 20 minutes. Salt and pepper to taste. Serves 6.

Very good vegetable soup. Easy to make. Added 2 beef boulion cubes and 16oz of homemade tomato sauce instead of diced tomatoes.
