LAZY DAY PIEROGI OR POOR MAN'S PIEROGI | |
1/2 pound bacon 1 large onion 1 large can Cream Of Mushroom soup 1 pound box spiral noodles (I prefer the tri-colored ones) 1 bag or jar of sauerkraut (drained) pepper, to taste Boil noodles until al denté, drain and place in large casserole bowl. Cut bacon into 1" pieces and cook in fry pan until done. Remove the bacon from the pan and fry the onion in the bacon grease until lightly browned. Pour bacon, onions, and cream of mushroom soup over noodles and mix well. If the mixture is too dry, you can add a little milk until it has a creamy consistency. Top with bread crumbs, if desired, and bake for 30 minutes at 350°F or until heated through. Please add: to the recipe I submitted the other day. I had that nagging feeling I forgot something...yipes! After the onions are sautéed, add the sauerkraut and pepper and cook about 20 minutes on medium heat. Mix all ingredients together and place in casserole dish. This recipe has been used by my family for as long as I can remember and was always a big hit at family gatherings.
