MINTED PEAS AND LIMA BEANS 
1 c. fresh lima beans or 10 oz. pkg. frozen baby lima beans
1 c. fresh peas or 1 c. frozen peas
1 c. frozen pearl onions
4 tbsp. butter
2 tbsp. lemon juice
2 tbsp. chopped fresh mint

In medium saucepan, cook limas in a small amount of boiling water for 8 minutes. Add peas and onions; cook an additional 3 to 5 minutes until lima beans are tender. Drain. Add butter, lemon juice and mint; toss gently. Garnish with fresh mint and lemon if desired. Makes 5 1/2 cup servings.

Microwave directions: place limas, peas, onions and 1/4 cup water in 2 quart microwave safe casserole, cover. Microwave on high for 8 to 12 minutes or until vegetables are tender, stirring once during cooking. Drain. Continue as directed above.

Since microwave ovens vary in power, you may need to adjust your cooking time.
