FINNISH COFFEE BREAD | |
2 c. milk 1/4 lb. butter 1 c. sugar 1 tsp. salt 6-7 c. flour 1 1/2 tsp. ground cardamom seed (16 seeds) 2 pkg. yeast and 1 tsp. sugar in 1/2 c. warm water 3 eggs Scald milk. Add butter and cool to lukewarm. Beat eggs. Add sugar, salt, and cardamom. Add yeast mixture. Add flour. Knead. Rise 1 1/2 hours. Punch down. Shape into 3 loaves or 36 buns. Rise 1 to 1 1/2 hours. Brush tops with a beaten egg and sprinkle with sugar. Bake at 350 degrees for 25-30 minutes. |
