RED RING SPICED CUCUMBERS (OR PINK PICKLES) | |
SYRUP: 2 c. water 1/2 c. red hots candy 2 c. vinegar 8 c. sugar Peel, slice, and cut out seeds of large cucumbers until you have 7 pounds. Soak overnight in: 1 c. lime Wash well and soak in ice water for 3 hours. Drain well. 1 c. vinegar 1 (2 oz.) bottle red food coloring Cover rings with water with alum. Then add food coloring and vinegar. Simmer 2 hours; do not boil. Drain. Heat ingredients for syrup almost to boil and pour over rings each morning for 3 mornings straight. On third morning, heat syrup and pour over rings in jars. Seal. Makes 8 pints. |
