SWEET POTATO AND APPLE CASSEROLE 
5 lg. sweet potatoes
3 lb. apples
Brown sugar
Salt
Butter

Peel and boil sweet potato just until you can pierce them with a fork. Do not overcook. Let potatoes cool. Peel, core, and slice apples into thick slices. Butter a 3 quart casserole. Alternate potatoes and apples, putting in 1" slices. Dot with butter and sprinkle with salt and generously cover with brown sugar. Finish with a layer of apples and brown sugar. Bake 1 hour at 325 degrees. Served best when cooked ahead then reheated.
