ESTHER'S FRUIT COCKTAIL CAKE 
1 1/2 c. sugar
2 eggs
1/2 c. salad oil
2 c. flour
1/2 tsp. salt
2 tsp. baking soda
1 med. can fruit cocktail
1/2 c. flaked coconut
1 recipe frosting

Beat sugar, eggs and oil together. Add flour, salt and soda. Add fruit cocktail with juice and mix well by hand. Pour batter into 9 x 13 inch greased pan. Sprinkle coconut over top of batter. Bake 45 minutes at 350 degrees.

FROSTING:

1 stick butter
1 tsp. vanilla
1/2 c. flaked coconut
3/4 c. sugar
1/2 c. evaporated milk
1/2 c. chopped nuts

Put butter, milk, sugar and vanilla in saucepan, bring to boil, stirring constantly. When thick, add coconut and nuts. Spread on cake while both are hot.
