PANCAKES 
2 egg whites
1 c. unbleached flour
1/2 c. whole wheat flour
2 tsp. baking powder
1/4 tsp. salt (opt.)
1 1/2 c. skim milk
2 tbsp. Puritan oil

Whip eggs (whites) until stiff but not dry; set aside. In large bowl, combine white flour, whole wheat flour, baking powder, salt and skim milk until moistened. Fold in egg whites. Add Puritan oil to batter. Cook on non-stick griddle, medium high heat, until golden brown, then turn and continue cooking other side.
