SOUTHERN COLLARDS AND PATTIES 
1 lg. bunch fresh collards
1 tbsp. plus 1 tsp. fat
1 tsp. sugar
1/4 c. bacon fat
1 sm. ham hock or bacon
Water
1 c. cornmeal
Hot collard broth

Wash and trim collard greens. Cut up. Add 1 tbsp. salt, sugar, bacon fat, ham hock and water. Cook until tender, using plenty of liquid. Combine and mix meal and 1 tsp. salt. Add enough hot broth for consistency to shape patties. Shape mixture into patties. Drop into boiling collard mixture, using enough liquid to cover patties. Cook until done. Yields 4 servings.
