3 c. sliced zucchini
1/2 c. chopped onion
1/2 c. grated Parmesan cheese
2 tbsp. parsley flakes
1/2 tsp. salt
1/2 c. oil
1/4-1/2 tsp. garlic powder
4 eggs, beaten
1 scant c. baking mix (Bisquick)

Mix above ingredients together except Bisquick. Let set to marinate 1-2 hours. Add Bisquick and bake 25 minutes at 350 degrees or until browned on top in 9 inch pan.
