MAKE - AHEAD CHEESY POTATOES 
4 c. potatoes, cooked and cubed
1 (10 3/4 oz.) can cream of chicken soup
1 c. cheese, cubed
1/4 c. minced onion
1/4 c. soda crackers, crushed
1 tbsp. butter, melted
Salt and pepper

Put cooked potatoes in a greased 9 x 9 inch pan. Combine soup, cheese, onions, salt, and pepper. Spread mixture over potatoes. Mix butter and cracker crumbs and top it with the buttered crumbs. Bake at 325 degrees for 45 minutes. These can be made ahead and refrigerated. Serves 5 people.
