PEPPER STEAK 
1/4 c. soy sauce
1 tbsp. water
1 1/2 tsp. cornstarch
1/4 tsp. pepper
2 clove garlic, minced
1 lb. lean flank or round steak
2 tbsp. butter
2 1/2 c. green pepper, diced
2 lg. tomatoes, cut in wedges
3 c. hot cooked rice

In medium size bowl blend soy sauce, water, cornstarch, pepper and garlic. Thinly slice steak on an angle - across the grain; mix into soy sauce mixture. Melt butter in a large skillet. Add green pepper and saute, stirring occasionally, until almost tender.

Mix in meat and soy sauce mixture. Cook stirring until meat loses its red color. Stir in tomato wedges and simmer; until tender; about 1-1 1/2 hours. Serve over hot cooked rice.
