VEGETABLE NOODLE CASSEROLE 
4 oz. egg noodles
1 stalk celery, sliced
1 sm. onion, chopped
1 sm. green pepper, chopped
1 c. fresh broccoli
2 tbsp. vegetable oil
1/2 c. milk
1 1/2 c. (6 oz.) shredded Monterey Jack cheese
3 tbsp. fine dry bread crumbs
1 tbsp. butter, melted
Salt & pepper to taste

Cook noodles according to package directions; drain and set aside.

Saute celery and next 3 ingredients in oil until tender. Stir in milk and next 3 ingredients. Spoon into a lightly greased 1 1/2 quart baking dish. Cover and bake at 350 degrees for 15 minutes. Sprinkle with bread crumbs and drizzle with butter; bake, uncovered, 10 minutes. 4 to 6 servings.
