EASY PEACH COBBLER 
1 pkg. ready mix pie crust
2 lbs. canned or fresh peaches
2 tbsp. cornstarch
2/3 c. brown sugar
1/2 c. white sugar
1 tsp. lemon juice
3/4 stick butter
pinch of nutmeg

Line pie plate and top edges with 1/2 of pie crust or use a square dish (8x8x2-inch).

Bake 10 minutes at 350°F. Combine other ingredients in a large pot. Cook until thick and pour into pie crust. Cover with remaining crust. Seal with a fork. Brush on melted butter and sprinkle with nutmeg and sugar.

Bake at 350°F for 25 - 30 mins.

Serves 6 to 8.

I doubled the recipe and used two 8 x 8-inch baking pans. Froze one for later use and served one for dessert.

My only criticism concerning the recipe is that the recipe is unclear on how to use the 3/4 stick of butter. I used the 3/4 stick of butter in the filling and everything turned out just fine. I later melted 1 tablespoon butter that I brushed over the pie crusts before sprinkling with nutmeg and sugar.

I hope this helps clarify the recipe as it's a good one.
