9 tbsp. butter 2 c. cake flour 1 c. sugar 2 1/2 tsp. baking powder 3/4 tsp. salt 3/4 c. milk 1 beaten egg 1 tsp. vanilla Preheat oven to 375°F. Stir butter to soften. Use a little to grease muffin pan. Stir in sugar, then the remaining dry ingredients. Add half the milk and all the egg. Mix until flour is dampened. Beat about 2 minutes at low speed on electric mixer or whisk for the same amount of time. Add remaining milk and vanilla, beat 1 minute longer. Pour into prepared muffin pans. Bake at 375°F about 20 minutes or until a toothpick inserted in center comes out clean. Submitted by: O |
