CASHEW-DATE BANANA PIE 
20 pitted dates
2/3 c. cashews
2 c. water
1/2 tsp. salt
1 tsp. vanilla
1 lg. banana

Whiz cashews, dates, and 1 cup water in blender. Add salt, vanilla, and second cup of water. Cook until thick. Slice half of large banana in bottom of baked crust. Pour cooled filling into crust. Top with rest of banana. May serve with whipped topping.
