APPLE DUMPLINGS 
1/2 recipe Sweet Pastry Pie Dough (recipe follows)
6 or 7 cooking apples
6 tsp. brown sugar
6 pieces of butter

SYRUP:

1/2 c. brown sugar
1/2 c. white sugar
1 c. water
1 tsp. cinnamon

Preheat oven to 350 degrees.

Roll out pastry and cut 6 circles, large enough to wrap around each apple. Put teaspoon of brown sugar and a teaspoon of butter in with each apple. Wrap in dough and seal. (Peel and core apples. - Edit.)

To make syrup, combine sugars and water in a saucepan. Add cinnamon and bring to boil.

Put apples in greased 9x9 baking dish. Pour syrup slowly over apple dumplings. Bake for 40-45 minutes at 350 or until lightly browned.

SWEET PASTRY PIE DOUGH:

2 sticks cold unsalted butter
3 c. pastry flour
Pinch of salt
3 tbsp. sugar
2 egg yolks
1-2 tbsp. heavy cream
1 food processor

Process first four ingredients to coarse meal stage. Add eggs and cream. Process until dough holds together. Remove from food processor. Chill until needed.
