TERRY'S RHUBARB SQUARES | |
BASE: 2 cups all-purpose flour 1/2 cup sugar 1/2 cup (1 stick) butter 1/2 tsp salt 1 tsp. baking powder 1 beaten egg Preheat oven to 375°F. Mix well and take out 1 cup for topping. Press remainder in 9x13-inch baking dish. FILLING: 1 1/2 cups sugar 1/2 cup (1 stick) butter 2 eggs 1/2 cup all-purpose flour 4 cups chopped rhubarb Mix filling and spread on base. Sprinkle 1 cup reserved crumbs over filling. Sprinkle with sugar and cinnamon. Bake at 375°F for 35 minutes. Submitted by: Terry Lee |
