OATMEAL MUFFINS 
1 c. oatmeal (instant)
1 c. buttermilk (1 tsp. vinegar in milk)
1/2 c. brown sugar
1 tsp. salt
1/2 tsp. baking soda
1/2 tsp. maple flavoring
1 egg
1 c. flour
1/2 tsp. baking powder
1/4 c. melted butter

Pour milk over oatmeal and let stand. Add the eggs and sugar and mix well. Then add the sifted dry ingredients and lastly the shortening. Pour into greased muffin pans. Bake for 18 minutes at 400 degrees. Makes 12 regular muffins.
