OAT BRAN CARROT AND ORANGE MUFFINS | |
1 c. milk 1 tbsp. vinegar 1 tsp. baking soda 1 3/4 c. flour 3/4 c. oat bran 1/2 tsp. salt 1/2 c. butter, softened 3/4 c. sugar 2 eggs 1 c. chopped pecans 1 c. raisins, finely chopped 1/2 c. finely shredded carrots Grated rind of 1 orange Combine milk, vinegar and soda; set aside. Combine flour, oat bran and salt; set aside. In large bowl cream butter and sugar until light. Add eggs, one at a time, beating well after each addition. Gradually add dry ingredients to creamed mixture alternately with milk mixture, beginning and ending with dry ingredients. Stir in pecans, raisins, carrots and orange rind. Divide batter among 12 greased muffin tins. Bake in preheated 400 degree oven for 20-25 minutes or until done. |
