MARINATED MUSHROOM SALAD | |
1 lb. mushrooms MARINADE: 3/4 c. salad oil 3/4 c. red wine vinegar 1/4 c. finely chopped onion 1/4 c. finely chopped parsley 2 cloves garlic, crushed 1 tsp. salt 1 tsp. sugar 1. Wash and drain mushrooms. 2. Make marinade. In large bowl combine all marinade ingredients. 3. Toss mushrooms with marinade, coating well. 4. Refrigerate, covered, at least 1 1/2 hours. I usually double this recipe for a large group. |
