1 head cauliflower 1 bunch broccoli 2 med. zucchini 1 lb. mushrooms 2 bell peppers 1 c. white wine vinegar 1 c. vegetable oil 1/2 c. fresh lemon juice 3 cloves garlic, minced 2 tsp. sugar 1 tsp. salt 1 tsp. pepper Break cauliflower and broccoli into flowerets. Slice peppers thin. Cut zucchini lengthwise and slice thin. Remove stems on mushrooms and slice thick. Put all vegetables in bowl. Put remaining ingredients in jar and shake vigorously. Pour over vegetables and cover and let stand overnight in refrigerator. |
