MEAT LOAF IN A POTATO RING 
1 lb. ground beef
1 (8 oz.) can tomato sauce with mushrooms
1/2 c. soft bread crumbs
1 egg
1/2 tsp. salt
1 sm. clove garlic, crushed
3 potatoes, pared and cut in 1/4 inch slices
1/4 c. chopped onion
1 (7/8 oz.) env. brown gravy mix
1 c. water

Combine beef, 1/2 cup tomato sauce, bread crumbs, egg, salt and garlic. Shape meat into 7 inch round loaf in a 9 inch pie plate. Overlap potatoes in a ring around loaf; sprinkle with onions.

Combine remaining tomato sauce, gravy mix and water; pour over meat and potatoes. Bake 375 degrees for 1 hour; cover with foil and continue baking 15 minutes.
