2 1/2 lbs. meat 2 c. salt 1 1/8 c. sugar 2 tsp. baking soda 1/2 tsp. salt peter Water to cover NOTE: Knowing Guy this meat was venison. Sprinkle layer of salt over bottom of container, then layer of meat. Alternate until container is full. Salt on top. Add enough water to cover. Let set overnight - 24 hours. Pour off brine and bring to a boil, skim off blood. Let it get cold. Make brine of sugar, soda and salt peter in 1 pint water. Add to salt water and put back on meat - weigh down. Keep in cool place 38 to 40 days. |
