RAISIN SCONES 
2 c. flour
1/4 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 c. buttermilk
1/2 tsp. salt
1/2 c. butter
3/4 c. raisins
1 tbsp. grated lemon peel

Combine flour, 2 tablespoon sugar, baking powder, soda and salt. Cut in butter until mixture resembles coarse meal. (Melt butter in microwave). Lightly mix in lemon peel, buttermilk and raisins. Dip hands in flour and gather mixture in a ball and knead lightly on floured surface. Pat 1/2 ball flat to 1/2 to 3/4 inch thick circle (half at a time works better). Cut like a pie (6 to 8 triangles per half ball). Bake on cookie sheet. Brush tops with buttermilk and sprinkle with sugar. Bake at 400 degrees for 15 minutes, until light brown, on upper rack.

Since microwave ovens vary in power, you may need to adjust your cooking time.
