STUFFED PIZZAS 
1 recipe Pizza Crust Dough (recipe follows)
1/2 lb. ground beef OR sausage
1 c. onion, chopped
1 clove garlic, minced
1/2 c. green pepper, chopped
2 med. tomatoes, chopped
1/3 c. tomato paste
1 tsp. dried basil
1/2 tsp. salt
1/2 tsp. each - thyme & oregano
3 tbsp. water
1 1/2 c. Mozzarella cheese, shredded
1 egg, beaten with 1 tsp. water

PIZZA CRUST DOUGH:

2 1/2 - 3 c. flour
1 pkg. dry yeast
1 tsp. salt
1 c. warm water (115-120 degrees)
2 tbsp. cooking oil

In bowl, stir together 1 1/4 cups flour, yeast, salt, water and oil. Beat on low 30 seconds and on high 3 minutes. Stir in as much of remaining flour as possible with spoon. Knead in remaining flour to make dough smooth and elastic. Cover and let rise until double (1 hour).

Brown meat, onions, garlic and green pepper. Drain fat. Stir in rest of ingredients, except cheese and egg.

Divide dough in 6 pieces. Cover. Let rest 10 minutes. Roll each into 8 inch circle on floured board. Spoon 2/3 cup meat mixture onto half of each circle. Sprinkle with 1/4 cup cheese. Moisten edge of dough with egg mixture. Fold in half and seal edge by pressing with fork tines. Prick tops with fork. Brush with remaining egg mixture. Bake on greased cookie sheet at 375 degrees for 30-35 minutes. Serves 6.
