1/4 c. soy sauce 1/4 c. bourbon 12 strips bacon 12 chicken livers brown sugar Cut raw livers in half and soak for 4 hours in the soy sauce and bourbon, combined. Drain on paper towels. Roll the liver in brown sugar and pack the sugar on the chicken liver. Cut the bacon strips in half and lay each liver on 1/2 strip of uncooked bacon. Roll up and put a toothpick through it. Lay on a jellyroll pan, then add a little more brown sugar. Bake at 400°F for 20 to 30 minutes, turning once or twice. These can be made the day before and covered tightly. Bake immediately before serving. |
