OATMEAL APPLE RAISIN MUFFINS 
1 egg
1/2 c. or more milk
1/2 to 1 c. raisins
1 chopped apple
1/4 c. oil
1 c. all-purpose flour
1 c. quick (not instant) oats
1/3 c. sugar
1 tbsp. baking powder
1/2 to 1 tsp. salt
1 tsp. nutmeg
2 tsp. cinnamon

Beat egg, stir in milk, raisins, apple, oil, flour, oats, sugar, baking powder, salt, nutmeg and cinnamon. Mix just to moisten. Pour into greased muffin cups until 3/4 full. Bake for 15 to 20 minutes at 375 degrees. Serve cool or piping hot with butter. Makes 18 (2 1/2 inch) muffins.
