FASTEST (AND VERY GOOD) HOMEMADE
PIZZA
 
4 large pita bread (10 to 12-inch diameter)
8 oz. passata tomato sauce or any low-spicy tomato sauce (not ketchup sauce!)
12 oz. shredded mozzarella cheese
4 ts. oregano flakes
salt and pepper, to taste
olive oil (optional)

Additional toppings:

any topping you like or have readily available!!!

There is no real substitute for the original thin Italian pizza cooked into an wood-burning oven!!! But this recipe is a favorite in my house when we don't want to go outside or when a sudden guest comes ( I always have most of the ingredients in my storeroom and/or fridge).

Begin by preheating the oven at 400°F. By the time the oven reaches its intended temperature, you will have the pizzas ready to put inside!

Put any weight over pita bread to flatten it as much as possible while preparing the other ingredients (I microwave them for 1 minute before placing under the weight to obtain the most flat and smooth surface, but this is optional) Put each pita bread in a ovenproof dish or plate and place all the ingredients over it, beginning with the tomato sauce, then the mozzarella and any additional topping you want or have readily available. I normally prefer the basic recipe, but everybody at home wants such simple toppings as ripe tomato slices, ham, onion slices, thin bell pepper strips (can be raw), mushrooms, salami, sausages or pepperoni slices etc. Just anything you have available.

Complete the pizzas with oregano, salt, pepper and a thin stream of good olive oil. Put them into the oven and in a few minutes they will be ready when the mozzarella begins to golden. Just check the underside of one of them to avoid any burning.

You would flatter your guests by asking them what custom topping they may want. A good cold Lambrusco Amabile wine should be best if you want a complete Italian meal, or just an icy beer will be fine.
