MEDITERRANEAN HEALTHY PIZZA'S
FOR TWO!
 
1 long crusty whole wheat bread
1 can (no salt added) tomato sauce
1 tsp. of Rosemary, Italian seasoning, garlic powder, honey
handful of spinach leaves, cut into strips
1-2 Roma tomatoes, diced
black olives, halved (pitted)
green squash, thinly sliced
green pepper, diced
same seasonings as above, minus the honey
3-4 tsp. olive oil
3 cloves garlic, finely minced
mozzarella cheese

Preheat oven 350°F degrees.

Slice bread to into 6 inch long segments.

Line a cookie sheet with foil (makes clean-up easy).

Stir seasonings and honey into tomato sauce, mixing well.

In a separate dish, add spinach and vegetables. Coat with olive oil. Add seasonings and garlic. Toss with spinach leaves and coat well. (You may want to toss some cheese in this as well).

Spread tomato sauce evenly on bread. Grate mozzarella cheese over the sauce. Top with the spinach mixture, and another layer of grated cheese.

Bake for 15 minutes OR until heated through and cheese is melted.

This makes a GREAT pizza! (My husband, who is not a huge "green veggie" fan, LOVED it!) Eat with a salad. Enjoy!! :)
