APPLE NUT CRUNCH 
1/2 c. sifted cake flour
1/2 tsp. salt
2 eggs
1 c. firmly packed brown sugar
1 c. chopped pecans
2 tsp. baking powder
1 tsp. vanilla
1 c. chopped tart apple

Sift together cake flour, baking powder and salt. Cream eggs and brown sugar, using electric mixer, until light. Gradually blend in flour mixture. Stir in vanilla and nuts and apple cubes. Bake at 350 degrees for 30 minutes in 10 inch pie plate. Cool in plate. Cut in wedges and serve with whipped cream or cheddar cheese.
