FAVORITE SPINACH RECIPE 
About 2 lbs. spinach stemmed and washed clean
1 sm. basket of pearl onions
3 to 4 stalks of bok chow washed and chopped in 1 inch pieces
2 tbsp. butter
Salt and pepper to taste
2 c. chicken broth

Clean onions and peel. Wash and put in cooker with chicken broth to cover and boil for about 10 minutes. Add cleaned and chopped bok choy and cook about 15 minutes more until onions and bok choy are tender.

Drain onions and bok choy. Melt butter in a skillet. Add spinach, onions, and bok choy, making sure spinach is coated. Salt and pepper to taste. This is great with corn bread.
