POTATO PAN CAKES 
3 c. cubed raw potatoes
2 eggs
1/4 c. flour
1 sm. onion, quartered
1 tsp. salt
1/4 tsp. baking powder

Put all ingredients into blender or food processor. Mix until just blended. Pour batter into oiled electric skillet, about 1/4 cup for each pancake. Brown and turn once to brown other side. Serve with sour cream.
