POTATO PAN CAKE 
4 med. size raw potatoes, shredded
4 tsp. flour
1 tsp. salt
Dash of black pepper

Mix all ingredients thoroughly. Heat about 1/4 cup shortening in skillet. Drop batter by spoonsful into skillet and spread batter by knife. Then fry on both sides until brown. Makes 10 to 12 pancakes.
