HONEY SWEET POTATOES 
10-12 sweet potatoes
1/4 c. butter
1/2 c. honey
1/2 c. brown sugar
1/2 tsp. salt
1/2 tsp. cinnamon

Wash sweet potatoes and place in a large pan with enough water to cover. Bring to a boil and cook, uncovered, for 30-35 minutes or until tender. Drain and slip off skins. Cut potatoes crosswise into 1/2 inch slices.

In a small saucepan, melt the butter and stir in the honey, brown sugar, salt and cinnamon. Heat until this mixture comes to a boil; remove from heat. Place sliced sweet potatoes in a greased shallow baking dish. Pour honey mixture over potatoes. Bake at 350 degrees for 15 minutes or until top is brown and bubbly. Makes 8 to 9 servings.
