SPICY BAKED LENTILS | |
1 (12 oz.) pkg. lentils 1 tsp. salt About 3 c. water 4 slices bacon, finely diced 2 (8 oz.) cans tomato sauce 1 med.-sized onion, finely chopped 1/4 c. firmly-packed brown sugar 2 tbsp. prepared mustard 1/3 c. molasses Sort through lentils, rinse and drain. Place lentils in a casserole with a lid (2 1/2 or 3 quart size). Add the salt, 3 cups of water, bacon (uncooked), tomato sauce, onion, brown sugar, mustard and molasses; stir well. Cover dish and bake in a 350 degree oven until lentils mash readily and liquid is bubbly and thickened (about 2 hours). Stir gently about every 30 minutes, adding a little more water if sauce becomes too thick. Makes about 8 servings. |
