CHILI VERDE 
2 lbs. boneless pork, 1 to 2 inch cubes
2 tbsp. flour
2 tbsp. shortening
2 cloves garlic, pressed
1 to 2 (20 oz.) cans of peeled tomatoes
1 lg. onion, chopped
2 (7 oz.) cans diced chilies (or to taste)
1/2 tsp. oregano
1/2 tsp. cilantro
1/4 tsp. cumin
2 1/2 tsp. salt
2 c. water or can use part broth

Coat pork cubes in flour and brown in hot shortening or lard. Onions can be done with meat or separately. Add the rest of the ingredients and simmer for 1 to 1 1/2 hours.
