BREAKFAST SAUSAGE CASSEROLE 
3/4 lb. Italian sausage
10 eggs
1 c. milk
3/4 tsp. salt
1 1/2 c. (6 oz.) shredded sharp cheddar cheese
1 1/2 c. packaged croutons (garlic or onion flavored)

Preheat oven to 325 degrees. In a large skillet brown the sausage over medium heat. Drain off fat. Put sausage in a greased 2 quart casserole dish. In a large bowl, beat the eggs; stir in the milk, salt and cheese. Pour egg mixture over sausage. Sprinkle with croutons. Bake, uncovered for 45 to 50 minutes. Let stand 5 minutes before serving.

I used 1 lb sausage, 12 eggs, 2 cups cheese, 2 cups croutons, and I put thinly sliced onions and minced garlic and some thinly sliced celery when I browned the sausage. I used a larger casserole dish - it was really a good brunch and I also served some fresh strawberries on the side. I used garlic flavored croutons.
