"JOE'S SPECIAL" 
4 Italian sausages (remove from casing before cooking)
1/2 lb. ground beef
1 sm. onion, diced
2 cloves garlic, minced
6 fresh lg. mushrooms, diced
2 eggs, lightly beaten
2 tbsp. Parmesan cheese (if desired)
2 pkgs. frozen cut spinach, thaw & drain well before cooking
5 tbsp. parsley

Brown meat until light brown, remove from pan and drain well. Saute onion, garlic and parsley until golden. Add spinach and meat, cook for 5 minutes, stirring constantly. Add mushrooms and beaten egg (if Parmesan cheese is used stir in with beaten egg before adding). Salt and pepper to taste and cook 5 to 10 minutes longer. Serves 2 very hungry people or 3 light eaters.
