CURRY PASTA WITH VEGETABLES AND
SHRIMP
 
2 tbsp. lemon juice
2 tbsp. olive oil
4 cloves garlic
1 lg. onion
Salt and pepper to taste
1 tsp. curry powder
1 head broccoli, cut up
1 med. zucchini, green, cut up
1 med. yellow squash, cut up
1 1/2 lb. cooked shrimp
2 lg. ripe tomatoes, cut up
Grated cheese to be added when ready to eat

In a large frying pan or wok, heat oil and saute garlic and onion. Add tomatoes; add broccoli, zucchini and yellow squash. When it looks cooked (about 7 minutes) add shrimp. Cook another 2 minutes; add the curry and salt and pepper. In the meantime, start cooking your pasta. When pasta is done, drain and mix with the vegetables and shrimp. Top with grated cheese.
