BASIC BROILED FISH 
1 lb. fish
Juice of 1 lemon
2 tbsp. butter or substitute
Salt and white pepper

Preheat broiler, place fish on broiler pan and grease well with butter, butter or oil. Season fish with salt and pepper, place pan on closest shelf to heat. Allow to cook approximately 3 minutes, then baste with 1/2 of lemon juice. Continue cooking until flesh flakes easily with fork and has an even whiteness - approximately 5 minutes. Serve with rest of lemon juice. Time 8-12 minutes. Serves 2. Enjoy.
